My favorite vanilla bean scones recipe
Around 3 times a week, my kids ask for these scones for breakfast. So i make them and then within an hour they are all gone! I have to hide one for my husband.
These are so soft and flaky and they melt in your mouth.
I love this scones because not only do they look impressive, they make great gifts, and they are also perfect for your farmstand. I always said that if i could make one recipe to sell, it would be these because they come out perfect every time!
There is something so comforting about baking at home, it is almost like a form of meditation for me. Scones are one of those timeless baked goods that are simple and special. I have been known to throw them together when company is coming over on short notice.

Ingredients:
1 and a half cups of all purpose flour
2 tbsp of sugar
2 tsp of baking powder
Half a tsp of salt
Half a cup of cold butter
1 large egg
1/3 cup of heavy cream
1 tsp vanilla extract
Seeds from one vanilla bean pod
For the glaze:
1 cup of icing sugar
2 tsp milk
vanilla been seeds
1 tsp vanilla extract
How to make the scones
Preheat the oven to 375F and line a baking sheet with parchment paper
Step one:
Mix the dry ingredients
In a large mixing bowl, whisk together:
flour
sugar
baking powder
salt
Step two:
Add the cold butter
Add the cold, cubed butter to the flour mixture. Using a pastry cutter or your finger tips, gently work the butter into the flour until the mixture resembles coarse crumbs. This is what gives the scones its flaky texture.
Step three:
Prepare the wet ingredients
In a separate bowl, whisk together:
heavy cream
egg
vanilla extract
vanilla bean seeds
To remove seeds from a vanilla bean pod. Split the bean lengthwise with a knife, and scrape out the seeds.
Step four
Combine the wet to the dry ingredients until you form a dough. I like to start this with a fork and then once combined, i use my hands to make sure they are combined well. Be careful not to overmix, the dough should look slightly shaggy but hold together when pressed.
Step five
Shape the scones
Lightly flour a clean surface and turn the dough out onto it.
Pat the dough into a circle, about 1 inch thick and then cut it into 8 wedges. I like to use a pizza cutter for the easiest way to do this.
Place each wedge onto your prepared baking sheet.
Step six
Bake the scones
Bake for around 15 - 18 minutes or until the tops are lightly golden.
While they are baking prepare the glaze.
Simply combine the glaze ingredients until forms a runny paste. You can add more milk if the mixture is too thick or more icing sugar if it is too runny.
Lightly drizzle the glaze onto cooled scones.
